100% Local Whole Wheat
Mildly sweet and very wheaty. This sandwich-style sliced bread has a very pleasant whole grain flavor. It is stoneground fresh and fermented overnight to bring out the richness of the wheat. Fresh milling eliminates the bitter notes typical of most whole grain breads made with mass produced flour. Carefully handling technique creates a lighter loaf with a toothy texture and nutty flavor. We don’t sift-off the bran so this bread is high in fiber…the forgotten super food!

More buttery than an acidic sourdough, great toothy texture and crunchy thin crust. A very long fermentation period (38-32 hours) and a wild culture helps transform flour, water & salt into a lovely flavorful bread. Let it age a few days to make amazing French toast, bread pudding or croutons.

This is a New York style rye, not over the top, but still enough rye flavor to be interesting. It has both a wild rye culture and a yeast preferment. It is light on the caraway. The chernushka seeds add a mild peppery-oregano flavor. Great for Reubens!
