Banana Bread Mini Loaves made from Beck's Farm-Style Baking Mix

Banana Bread Mini Loaves made from Beck’s Farm-Style Baking Mix. 100% Stone Ground-Whole Grain.

1 bag (340 g) Beck’s Farm Style Baking Mix

⅓ cup (66g) sugar, granulated

1 (~50g) egg, whisked

6 Tablespoons (70g) canola oil

¼ cup (55g) water

1 ½ cups (175g) banana, chopped (fresh or frozen)

½ cup (55g) pecans, chopped

Fresh banana & sugar for topping

Great combo

  • Chocolate chips, Orange zest & walnuts (instead of pecans)
  • Strawberries & sliced almonds (instead of pecans)

 

Directions

Preheat oven to 350°F.

In a medium bowl, stir together dry mix and brown sugar. In a separate medium bowl, whisk together egg & oil, then whisk in water. Pour liquid ingredients, bananas & nuts (and other add ins if using) into dry ingredients and mix gently but quickly by folding with a rubber spatula.

Scoop into oiled & parchment lined mini loaf pans. Garnish with sliced fresh banana & sprinkle with sugar. Bake until done (Approximately 50 mins).
