Basic Pancakes

1 bag (340g) Beck’s Farm Style Baking Mix

1 (~50g) egg, whisked

3 Tablespoons (35g) oil or melted butter (cooled, not hot)

⅔ cup (160g) water or milk

Maple syrup, vanilla yogurt, sliced bananas or any of your favorite pancake toppings

 

Directions

Preheat electric griddle to approximately 350°F (adjust as needed), or heat a well-seasoned pan on the stove top (medium or medium-low heat, adjust as needed)

In a medium-large bowl, whisk together egg and oil (or cooled butter) then whisk in water (or milk). Add baking mix and stir together until batter is evenly moistened (additional ingredients, if using, go in at this point). Scoop out portions (an ice cream scoop is great for this) onto a hot, well-oiled griddle or pan. Cook until bubbles form all over top of pancake, flip and brown the other side. Serve immediately with toppings or keep in a covered dish in a warm oven (200°F) until ready to serve.

Optional Additions:

  • ½-¾ cup frozen blueberries, folded into batter
  • ½-¾ cup sliced bananas, folded into batter
